The banana is peeled, packed in polyethylene bags, and then placed in standard banana boxes. Each box is stored in a container. The boxes must be evacuated immediately for cooling.

 

The preparation of this fruit is the most sensitive activity in the industrial process for the export of semi-processed products because a lack of care in removing the peel can result a loss of product quality.
